Black Bean Burgers, Summer Quinoa Salad & Watermelon Slushies


In our last cooking class, Registered Dietitian Kelsie White showed us how to make Black Bean Burgers, Summer Quinoa Salad, and Watermelon Slushies. These recipes are simple and easy to make, and perfect for a summer BBQ. Enjoy!

Black Bean Burgers


  • 2 tablespoons ground flaxseed
  • 3 tablespoons water
  • 2 cans black beans, drained
  • 1 cup oatmeal, blended
  • 1 teaspoon minced garlic
  • 2 tablespoons minced onion
  • 2 teaspoons cumin
  • 2 tablespoon chili powder
  • 1 teaspoon paprika
  • 2 tablespoons hot sauce of choice
  • Salt and pepper to taste


  1. Place flax and water in a small bowl. Set aside to thicken.
  2. Preheat oven to 350℉ and line a baking sheet with parchment paper.
  3. In a blender, blend oats until they resemble flour. Alternatively, you can use oat flour.
  4. Mash beans with a potato masher until most beans are broken up. Add oatmeal, seasonings, and flax. Stir until well combined.
  5. Form into 5-6 tightly packed patties. Bake for about 10-15 minutes per side.
  6. Serve on a bun with desired toppings.
  7. Enjoy!


Summer Quinoa Salad


  • 1 cup uncooked quinoa
  • 2 cups water
  • 2 small peaches, pitted and sliced
  • 1 cup grape tomatoes, halved
  • 1 cup fresh sweet corn
  • 1 large avocado, pitted and sliced
  • ½ small red onion, diced
  • ½ cup chopped fresh basil
  • 1 bag of baby spinach


  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste


  1. In a medium saucepan, bring quinoa and water to a boil. Cover with a lid, reduce heat to low, and simmer for 15 minutes. Remove from heat and fluff with a fork. Transfer quinoa to a large bowl to let cool.
  2. Prepare all fruits and veggies as listed in the ingredients.
  3. In a small jar, add all ingredients for dressing. Give it a good shake to combine.
  4. Add fruits and veggies to the large bowl with the cooled quinoa and pour the dressing on top, stirring well to combine.
  5. Enjoy!
Watermelon Slushies


  • 5 cups cubed watermelon, frozen ahead of time
  • Juice from 4 limes, approximately ½ cup
  • 1 cup sparkling water


  1. Cut watermelon into cubes and freeze for a few hours, preferably overnight.
  2. When ready to make, take the watermelon out of the freezer and allow to thaw for about 10 minutes to soften slightly.
  3. Toss all ingredients into a blender and blend until smooth.
  4. Enjoy!
