Instant Pot Spanish Rice

Spanish rice is the perfect accompaniment for your favorite Mexican food. 


  • 1 large yellow onion, chopped small                                                 
  • 4 cloves garlic, minced                                         
  • 4 cups uncooked brown rice, rinsed       
  • 28 oz canned Rotel diced tomatoes & green chiles            
  • 2 teaspoons salt, or to taste                                               
  • 4 1/2 cups water or vegetable broth


Using sauté function on Instant Pot, dry saute onion & garlic, adding 1-2 tbsp water if dry. Add rice and stir 1-2 minutes. Add the rest of the ingredients, stir, seal. Allow natural release. Fluff with fork and serve.

Without Instant Pot, in a pan on the stove sauté onions, garlic, and rice as above. Add the rest of ingredients, bring to a boil and simmer for 40 minutes.
