No Mayo Coleslaw

From Simply Recipes, serves 4


  • 4 cups thinly sliced cabbage (about 1/3 to 1/2 cabbage; may use 1/2 purple cabbage for extra nutrition)
  • 1/4 cup (packed) fresh cilantro, chopped
  • 1 carrot, grated
  • 1 tablespoon extra virgin olive oil
  • 2 radishes, thinly sliced
  • 1 tablespoon seasoned rice vinegar, or plain with added sugar to taste
  • 1 green onion, thinly sliced                                                               
  • Salt and freshly ground pepper to taste


Mix all of the vegetables in a large serving bowl.

Whisk the oil and vinegar in a small bowl, then add to the cabbage mixture and toss to coat.

Serve immediately or refrigerate for later.
