White Bean Tofu Chili

 

 

Ingredients:

 

  • 2 cans great northern beans
  • 1 package firm tofu, pressed
  • 2 cups low sodium vegetable broth
  • 1 small can diced green chilis
  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • 2 tablespoons vegan chicken-style seasoning
  • 4 tablespoons nutritional yeast
  • 1 tablespoon chili powder
  • ½ teaspoon cumin
  • Salt to taste

 

Directions:

  1. Press excess water from tofu with a tofu press. Alternatively, wrap the tofu in paper towel and set something heavy on it for at least 10 minutes.
  2. Strain and rinse beans.
  3. Dice onions. Add to a pot with olive oil and sauté until translucent. Add garlic and sauté for 1-2 additional minutes.
  4. Pour vegetable broth into the pot. Crumble tofu and add to the pot. Add all remaining ingredients and stir well to combine.
  5. Bring to a simmer, cooking for 10 minutes.

Serve with cornbread and enjoy!
