So Simple Strawberry Spinach Salad
Add a little love to your salad today! Strawberries are naturally heart-shaped when sliced, and are a perfect addition to this healthy dish.
Ingredients
- 1/2 cup toasted slivered almonds
- 8 oz baby spinach leaves, washed
- 1 1/2 teaspoons poppy seeds, optional
- 6-8 oz fresh strawberries, quartered
- 1 tablespoon sesame seeds, best toasted
Dressing:
- 2 tablespoons olive oil 2 teaspoons low sodium soy sauce (GF)
- 4 tablespoons lemon juice
- 1 tablespoon finely sliced fresh mint
- 1 tablespoon honey
Instructions
Salad ingredients can all be tossed together in a bowl with dressing drizzled over but it’s prettier if spinach is laid down in a wide bowl, strawberries and almonds scattered over, then seeds over that. Drizzle dressing over all and serve.
