So Simple Strawberry Spinach Salad

Add a little love to your salad today! Strawberries are naturally heart-shaped when sliced, and are a perfect addition to this healthy dish.

Ingredients

Strawberry Spinach Salad
  • 1/2 cup toasted slivered almonds
  • 8 oz baby spinach leaves, washed
  • 1 1/2 teaspoons poppy seeds, optional
  • 6-8 oz fresh strawberries, quartered
  • 1 tablespoon sesame seeds, best toasted

Dressing:

  • 2 tablespoons olive oil 2 teaspoons low sodium soy sauce (GF)
  • 4 tablespoons lemon juice
  • 1 tablespoon finely sliced fresh mint
  • 1 tablespoon honey

Instructions

Salad ingredients can all be tossed together in a bowl with dressing drizzled over but it’s prettier if spinach is laid down in a wide bowl, strawberries and almonds scattered over, then seeds over that. Drizzle dressing over all and serve.
