Sweet Potato Black Bean Bowls

 

In our October 2023 cooking class, Registered Dietitian Kelsie White showed us how to make Sweet Potato Black Bean Bowls with a delicious, creamy Lemon Tahini Dressing. This recipe is a great way to pack in the veggies. Enjoy!

 

Sweet Potato Black Bean Bowls
Ingredients:
  • 2 cups de-stemmed and chopped kale
  • Extra-virgin olive oil
  • 2 medium sweet potatoes, peeled and quartered into cubes
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 15-ounce can of black beans, drained and rinsed
  • 2 cups cooked brown rice
  • 1 avocado
  • 1 cup cilantro leaves
  • Lime wedges (optional)
Directions:
  1. Place the kale and a drizzle of olive oil in a bowl. Massage for at least 1 minute to soften the leaves.
  2. Preheat the oven to 450 °F. In a large bowl, mix the sweet potato cubes with a drizzle of olive oil and sprinkle with all seasonings. Place onto a baking sheet and roast until tender, about 25-30 minutes, stirring halfway through.
  3. Assemble the bowls with all remaining ingredients and top with a sauce or dressing of your choice.
  4. Enjoy!

 

Lemon Tahini Dressing
Ingredients:
  • 12 oz extra firm silken tofu
  • ⅓ cup lemon juice
  • 3 tablespoons tahini
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon cumin
Directions:
  1. Add all ingredients together in a blender. Blend on high until smooth.
  2. Use as a topping for salads, sandwiches, and soups.
  3. Enjoy!
