Vegan Double Chocolate Microwave Cake in a Cup

Ingredients
- 2 tbsp whole wheat flour or oat flour
- 3 tbsp unsweetened plant-based milk
- 1 tbsp almond flour
- 1 tbsp natural nut butter (I used almond)
- 1 tbsp + 2 tsp unsweetened cacao powder
- 1 tbsp maple syrup or date paste
- ¼ tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp dairy-free chocolate chips
Directions
In a 6-8 oz mug, combine flour, almond flour, cacao powder, baking powder, and salt. Mix well using a fork.
In a small bowl mix together plant milk, nut butter, maple syrup or date paste, and vanilla extract. Add to the dry ingredients and mix well. Be sure to get into all areas at the bottom of the cup.
Fold in half of the chocolate chips. Smooth the batter and scatter the rest of the chocolate chips on top.
Microwave for 1 minute. Let cool slightly (it will further set during this time). Enjoy!
Note: Cooking time is for a 1200watt microwave. Adjust up or down by a few seconds if stronger or weaker. Will take approximately 12-14 minutes in a conventional oven at 350 degrees.
