What’s in your Gullet?

As we look towards celebrating all things green for St Patrick’s Day, why not plan a meal filled with lots of greens for March 17th? March is also Colorectal Cancer Awareness Month. When it comes to colon health, we need to keep the body’s disposal system working as efficiently as possible.  Eating more greens is just one way to help things move along. Many people struggle with how to get more greens without just eating salads everyday. Let me offer some ideas in hopes that you will be moved to explore the beautiful world of greens.

One of my all time favorite non-salad ways to add more greens to my diet is Chef AJ’s Sweet Potato Chili with Kale. Add as much or as little kale as you’d like. You say you don’t like kale? Add whatever green leafy you do like.

Many of your day to day recipes can be greened up with the addition of this powerhouse food.  Like sandwiches?  Add your favorite lettuce or better yet, use the lettuce as a wrap for your delicious sandwich fixings.  Stir fries, stews, soups more your style?  It is so simple to add greens.  Pizza Fan?  Adding spinach as a base to the pizza is a great way to add valuable nutrition.
